One day in 1996, Mike, Barry and Todd (while suffering a disappointing dining experience in a local Houston restaurant) began thinking that they could run a restaurant better than the one they were eating in.
They began making a list of things they would like to see in a restaurant, including some very simple ideas:
Quick service in a casual and fun environment reminiscent of Southern Louisiana (no waiting in a lobby or smoky bar for a table)
No waiters to ruin your dining experience (from waiting too long on your check when you are ready to leave) and
A bar where you could relax with your friends while enjoying a frozen Hurricane.

This "list", along with money they scraped together, helped build the first Boudreaux's Cajun Kitchen in 1999.
Since that day, Boudreaux's has maintained its commitment to making food from scratch that fuses popular items with a southern Louisiana flair.
